A delicious low sugar jam made with chia seeds, which provide important Omega 3 fats .  A recipe brought to us by Joy Skipper.

Serves 4-6

25g soft dried dates, pitted and chopped

1 tbsp balsamic vinegar

250g ripe strawberries, hulled and chopped

1 tbsp chia seeds

High protein yoghurt to serve

  • Place the dates in a pan with the vinegar and 2 tbsp water and cook over a low heat, stirring to form a lumpy paste.
  • Add the strawberries and continue to cook on a low heat for 4-5 minutes, then remove the pan from the heat. Stir in the chia seeds and mash them into the soft strawberries with a fork or masher.
  • Spoon the mixture into a small jar, and once it has cooled, seal with a lid. The jam can be stored in the fridge for up to a week.
  • Delicious served rippled through Greek yoghurt.
