Delicious cinnamon spiced lamb with the coolness of yogurt, this is a perfect summer dish.  Perfect to serve at a barbecue, but almost easier to cook in the oven.

For the Koftas: (makes 12)
800g lamb mince
2 tsp ground cumin
3 tsp ground coriander
1 onion, very finely chopped
1 tsp ground cinnamon
4 garlic cloves crushed
1/2 tsp salt
1/2 tsp black pepper

For the tzatziki:
½ cucumber, halved and deseeded
1 x 170g pot Greek yogurt (use 0% Total, nice and thick)
1 garlic clove crushed
handful mint leaves, chopped finely

You’ll also need 12 wooden or metal skewers plus a couple of baking trays.

1.  Make koftas first.  In a bowl, mix all the ingredients with your hands really well.
2.  Divide into 12 portions and taking each skewer (if skewers are wooden, soak them for 20 mins beforehand), wrap
the meat portion round the skewer making a sausage shape.  Repeat until you have 12.
3.  Heat oven to 200C/Gas6 (or you can use the barbecue but they can fall through the gaps).  Place the skewers on
baking trays and roast for 15-20 minutes, turning over half way through.
4.  While cooking, make the tzatziki.  Grate the cucumber, squeeze out all the juice, then mix with all the other ingredients.  Keep in fridge
until you eat.  Bon appetit!
